SUMMARY:

‘‘Jabuticaba (Plinia Cauliflora) is a fruit native to Brazil with high antioxidant potential and its consumption is correlated with a lower risk of the appearance of several chronic neurodegenerative diseases. They, in turn, are related to a poor quality of life in general of the population and chronic exposure to ultraviolet radiation (UV), causing an imbalance between the production of reactive species and the antioxidant system, that is, oxidative stress and the carbonyl. This work seeks to take advantage of the residues (bark and seed) in order to evaluate the antioxidant, antiglicante and photoprotective potential. The antioxidant potential was evaluated by the DPPH•, FRAP, O2•˗ and HOCl assays, the Antiglycant potential was evaluated in the BSA/glucose+fructose and Hemoglobin/glucose+fructose systems, changes in the Soret band and blood fibrillation were also evaluated. hemoglobin, the photoprotective potential was evaluated by the Mansur method. Thus, the extracts showed antioxidant activity for the methods used, protected the Soret band against Glycation, bloomed with the BSA System in the same region of the AGEs, showed a photoprotective effect with SPF > 6 for both the extracts and the formulations containing only the extracts and the formulations incorporated with benzophenone-3. Therefore, the inhibition of the extract against the glycation of proteins that generates advanced glycation products (AGEs) which cause various diseases with changes in biomolecules.
