SUMMARY:

With the increase in production and consumption of cheese in recent years and factors such as limited availability of raw materials, the high cost of rennet, vegetarian diet, genetically modified foods, and religious issues, there has been a need for research to identify new sources of materials for cheese production. The use of this vegetable type adds to the manufacture a higher productivity, as well as the use of cheaper methodologies in comparison with the classic methods, and it is also of simple extraction and purification of the coagulant. Chia (Salvia hispanica L.) is an herbaceous plant that belongs to the family Lamiaceae. Its seeds are natural sources of fatty acids, omega-3, fiber, and protein, besides other important components, such as antioxidants. In this context, the development of the project contributed to the acquisition of a protein preparation obtained from the seeds of Salvia hispanica L. as a source of enzymes with milk coagulation activity. To this end, extracts of Salvia hispanica L. seeds were prepared, and the effect of concentration and incubation time on the proteolytic activity was evaluated.
