SUMMARY:

 For the monitoring of possible contamination of Milked Human Milk (LHO) and collected in Human Milk Banks, RDC 171/2006 establishes the monitoring of specific physical-chemical standards (dirtiness, Off-flavor, color, acidity in dornic degrees and crematocrit) and a microbiological test performed after pasteurization (total coliforms present/absent) for quality control. However, it is necessary to know the conditions of maternal and perinatal health that affect the quality of milk, in addition to other bacteria that can be researched as microbiological indicators of sanitary quality and estimation of the shelf life of foods - such as heterotrophs (psychotrophs, mesophilic and thermophilic) and thermoduric – in order to detail the contamination. Therefore, it is important to carry out research related to the profile of donors and the microbiological control of sanitary conditions, due to the vulnerability of recipients of this milk, who are newborns in intensive care units (ICUs). Objectives: To correlate the situation of the collection of expressed human milk, maternal and perinatal health conditions with the physical-chemical and microbiological quality of raw and pasteurized EHM. Methodology: This is a quantitative, prospective and cross-sectional study that will take place at the BLH-HUPAA (Human Milk Bank of the Professor Alberto Antunes Hospital) and at the Laboratory of Biochemistry of Parasitism and Environmental Microbiology (LBPMA) of the Institute of Chemistry and Biotechnology (IQB) from UFAL, with 40 human milk donors. There will be an analysis of the collection conditions through an elaborate form; detection and quantification of heterotrophic (mesophilic, thermophilic, psychotrophic) and thermoduric bacteria in breast milk samples approved by the HMB in physical-chemical tests and microbiological tests. Results: It is expected to obtain, from the results, temporal and spatial conglomerates of the profile of the donors and the sanitary quality of the LHO through the elaboration of a Web System for the registration and analysis of the HMB/HUPAA data and to suggest more precise indicators of Microbiological quality of human milk to be stored for use in a neonatal ICU
