SUMMARY:

Propolis is a resinous substance, chemically complex, made by bees, whose variability and physicochemical characteristics are dependent on the environment where they are produced. The literature shows that 13 types of propolis have already been identified, highlighting green propolis because it is more abundant in nature, and is a target of consumers, having as its botanical origin the apexes of Baccharis dracunculifolia (Asteraceae). Rich in compounds such as 3,5-diprenyl-4-hydroxycinnamic acid (artepillin C) (1), 3-prenyl-4-dihydroxycinnamic acid (baccarin) (2), 3-prenyl-4- hydroxycinnamic acid (drupanin) (3), aromadendrin-4'-O-methyl-ether (4) and kaempferide (5) phenylpropanoids. That give it a wide therapeutic application in the face of activities, antimicrobial, antioxidant, antifungal, antiviral, anticariogenic, antiinflammatory and that when associated with food give a functional character. The purpose of this research was to obtain and characterize the hydro-alcoholic extracts and spray-dryer microcapsules of Propolis Verde, using analytical methods. In the characterization stage, physical-chemical techniques were applied (CLAE-DAD-UV, GC-MS, Fenis, flavonoids, DPPH, MIC). The morphology of the microparticles was observed by SEM. Antioxidant activity was measured by binding to the DPPH radical and antimicrobial activity was evaluated for growth inhibition against strains of Enterococcus faecalis Staphylococcus epidermidis. The green propolis granulate presented a percentage of antioxidant activity of 96.07% for foods 3 and 97.55% for meetings 4 at a concentration of 100 µg / ml. The partitioned ones of the commercial extract of green propolis showed antibacterial activity against the microorganisms Staphylococcus aureus, Staphylococcus epidermidis and Enterococcus feacalis, the high content of prenylated cinnamic acids of the artepelin C type and flavonoids found, respectively, in the best contributed antimicrobial phases. The preliminary results showed that it was possible to identify some properties of green propolis, which is rich in natural phytocomposites, and can be used in the prevention of various diseases through the use of techniques such as microencapsulation of bioactive materials.
